Who We Are

The Olde Hearth Bread Story

From the beginning, Olde Hearth’s goal has been to offer gourmet bread & pastry, made by hand, without preservatives, added fat, dairy, or sugar. These products are healthy, they look great and taste even better!

The Olde Hearth Bread Story began in 1998 when Shannon and his father, David, started the bakery. One of the first people they hired was Janice Brahm, and together the three of them set off on a journey to bring high quality bread to Central Florida.

Shannon’s passion for bread began at an early age. He grew up in the back of his father’s restaurant. Upon graduating from the Culinary Institute of America, he moved to San Francisco where he went to work at Acme Bread Company, one of America’s premier artisan bakeries. While there, he honed his baking skills and satisfied his love of bread.

David Tally, Shannon’s Father, a Restauranteur for over 40 years, had owned many restaurants. He helped Shannon bring his dream to life in Central Florida. Janice Brahm, who prior to working at Olde Hearth, was the head baker at a similar bakery in Delray. She was the missing piece of the puzzle that allowed the Olde Hearth team to thrive in the Central Florida Marketplace.
